Cooling and keeping cooked food without a fridge
The rice page is a specific case of a general problem. This is the general one.
Almost all domestic food safety advice assumes a fridge. Not as a convenience — as the mechanism. Take it away and the advice does not degrade gracefully into a slightly riskier version of itself; several pieces of it stop meaning anything at all. This page is about which parts still apply, which do not, and what actually works instead.
The Danger Zone
The FSA’s framing, and the only piece of the standard advice that transfers directly:
Between these temperatures the bacteria may grow and make you ill
The range is 8°C to 63°C. Below 8, growth is slow. Above 63, it does not happen. Between the two, it does — fastest around the middle, which is roughly the temperature of a pleasant afternoon.
Everything else in the standard guidance is machinery for getting food through that band quickly, or keeping it out of the band entirely. The fridge is one end of that machinery:
your fridge should be between 0 and 5°C
Note what 0–5°C is: comfortably below 8, and therefore below the zone. A cool box with a couple of ice packs is usually somewhere in the teens by the afternoon — which is not “a bit less cold than a fridge”, it is inside the Danger Zone. It slows the food warming up. It does not take it out of the range where bacteria grow.
What the guidance says, and where each part breaks
cool cooked food at room temperature and place in the fridge within one to two hours
divide food into smaller portions in containers or freezer bags before putting in the fridge or freezer
Eat leftovers within 48 hours or freeze them if you think this won’t be possible
Take the fridge out and look at what is left:

That last row is the one that misleads people most, so it is worth being blunt about: reheating is not a fix for food that was held badly. It kills bacteria. It does not remove the toxins some of them leave behind — the emetic toxin from Bacillus cereus survives 121°C for half an hour, which is more than any pan will do. Hot food that was left out too long is hot food that will still make you ill.
So what do you actually do?
Cook to the meal. This is the whole answer, and everything below is detail. Portion at the dry-ingredient stage, before cooking, not at the serving stage after it. The practical skill of cooking well without a fridge is mostly the arithmetic of not producing leftovers.
That is easier here than in most kitchens, because tins, dried pulses and grains portion precisely. A 400g tin is a decision you make when you open it.
Eat it hot, or eat it soon. Food is out of the zone while it is above 63°C. Serving straight from the pan is not just pleasant, it is the safe window.
Get it out of the pan you cooked it in. A lidded pan on a warm hob is an incubator. This is FSA advice for rice specifically and the physics is not rice-specific.
Do not plan around “it’ll be fine tomorrow”. Deciding at the end of a meal is how food ends up standing on the side for three hours while somebody thinks about it. Decide before you cook.
If you genuinely have refrigeration, verify it. A cool box is a fridge only if it holds at or below 5°C, measured with a thermometer, not assumed from the presence of ice. A cheap fridge thermometer is the single most useful piece of kit on this page. If it holds, normal guidance applies and you have a fridge. If it does not, you do not, and you should not run your food planning as though you do.
No safe number of hours
You will find tables online giving times for food left out at various temperatures. We are not going to give you one, because we have not found one in the sources cited here, and a number invented for this page would be used to justify eating something.
What the FSA gives is a threshold (8°C) and a destination (0–5°C). It does not give a “safe at 20°C for N hours” figure, and the absence is not an oversight — it depends on the food, the starting bacterial load, the exact temperature and how long the food took to get there, none of which you can measure in a van.
When food has been sitting in the zone and you are estimating, you have already lost the thread. Bin it, and portion better next time.
The foods that make this easy
Some things sidestep the problem entirely, and they are worth building a repertoire around:
- Anything eaten straight from the tin or pack — no cooking, no cooling, no leftovers. Once opened, though, it is ordinary cooked food.
- Dried goods rehydrated to portion — couscous, instant polenta, noodles. One portion is as easy as four.
- Hard cheese, cured sausage, flatbreads, nuts, dried fruit — ambient by design, no cooling step to get wrong.
- Food cooked and eaten in one sitting, which is most good cooking anyway.
The pattern across all of them: the safest meal is one that never has to be kept.
